I made this yesterday for dinner, and it turned out great:

4 pork chops (browned)
1 can chunk or crushed pineapple (drained)
3/4 cup pineapple jam
1/4 cup honey
1 tablespoon soya sauce
1/2 teaspoon ground ginger
2 green onions (optional) chopped
1 green pepper (optional) thinly sliced

*Place Pork Chops in bottom of crock pot. In seperate container mix, pineapple, jam, honey, soya, and ginger. Pour over meat, cook on low 4 - 6 hours. Half way through cooking time, add onions and peppers. Serve over hot steamed rice.

I omitted the peppers and onions to keep certain family members happy, and I used homemade Pineapple-Pear Jam, but I think this would be great with marmalade aswell. You could add other veggies too, like carrots, celery etc. This may also work well with a pork roast....
