In a couple of weeks I'm going to the beach with a large group of friends (16 peeps total) and we each have to cook breakfast/dinner. Lunch is on our own and I'd like to bring my large 6qt crockpot and throw something in for lunch - something everyone can just walk up to and eat when they're hungry. I'm thinking maybe french dip sammiches that I've done before, but before I decide I wanted to hear what your favorite crowd pleasers are. We'll be at the beach so I dont' want to spend much time in the kitchen and we've got 4 days so I could conceivably do this a few times.

What about Chilli, that would be fairly easy, serve with a bun or Nachos and Voila!

Ooh, chile... <drool>
08/30Tri, chili is easy but there are variations. Here's my own crockpot recipe for a very basic "chile con carne." (chile with beef)
Rev's Chile con Carne
1 pound pinto or pink beans, soaked (either soak them overnight, with a mixture of 1 T each vinegar, baking soda and salt to "de-gas" them, or, to "quick soak," place them on the stove and bring to a boil, remove from the heat and let sit for up to two hours before rinsing)
1 pound ground meat (beef, turkey or pork)
2 large onions, diced
1 T minced garlic
1 T dried cumin powder
1 t chile powder (or a blend of paprika and red and black pepper will work fine)
1 t dry mustard powder (optional)
First, complete the soaking process for the beans. This is important. If you start with plain dried beans this will not cook properly in the crock. Rinse the beans and put them in the crock. Then just brown the meat and drain then add the onion, stir until soft, and the garlic last (don't burn!). I like to cook my spices, too, because I think it REALLY brings out the nutty flavor in the cumin. Throw everything in the crock, fill the crock with water (for a 5 quart, for a six leave about an inch from the lip), and cook for 8 hours on low or 6 hours on high. To thicken I hit it with a hand blender for just a couple of seconds but you can also "mush" up some of the beans with a ricer or potato masher.

I make a "Quickie Stew" that my friends can never seem to get enuff of.
Canned Tomoato Soup
Cooked Ground Meat (Beef, Chicken, or Turkey.. or whatever leftovers are handy.. even done it with sausage before)
Canned Mixed Veggies (if you like freah veggies then carrots, corn, peas, etc.. will take longer to cook but worth it)
Season to taste (fresh rosemary, onion, garlic, chives)
I toss it all in and let it cook until it's hot and the carrots are softish. The gang will just eat and eat and eat. Perfect for lunch or at midnight.

My favorite is Pulled Pork Sandwiches. I make this at least once a week for my guys probably.
I heard about it here on this very tribe and I'm so thankful, it's the easiest thing ever!!!
Pork Loin, BBQ sauce, hoagie rolls.
Pork in BBQ sauce on low all day, come home pull it apart with a fork, scoop it on to the hoagies, and done!!!

Today's dinner (and tomorrow's lunch) is a couple of frozen chicken breasts with a can of cream of chicken soup with a can of water and a can of milk, 2 largely-diced potatoes, a sprig of rosemary and 2 sage leaves from the garden bruised and thrown in whole, a couple of tablespoons of minced onion, and one mashed garlic clove. I'm going to make biscuits later to go with it.

I decided to stick with the tried and true french dip. People loved it! It was gone all at once and people were sharing their bowls of au jus. I didn't even have the right herbs (sage and rosemary) and improvised with some italian seasonings and chili powder - worked out great! I think it also comes down to a quality soy sauce, which I brought. :) Now I need to lose the 10 lbs or so I gained from this weekend! Too much great food!
