Hey all~
I just started a batch of chile verde in my crockpot and am looking forward to it with some black beans and flour torts tomorrow night!
Here's the recipe:
Ingredients:
1 - 1 1/2 # lean pork, diced
1 yellow onion, diced
1 green bell pepper, diced
4 jalapeno's, diced (you can remove seeds to keep the heat down!)
1 head garlic, minced
7 tomatillo's diced
ground black pepper
ground cumin
chile powder
salt
Directions:
1. Place the pork, onion, peppers and garlic in a large frying pan and sautée until the onions clear. I usually add liberal amounts of pepper, cumin and chile powder.
2. Turn crockpot on high and fill 1/3 with water and add some salt, then the tomatillos.
3. When they're ready, add the ingredients from the frying pan into the crockpot. Add water, if necessary to cover all the ingredients, cover and let cook for 3-4 hours, stirring occasionally.
4. Set crockpot to low and let cook for another 3-4 hours, adding water if necessary.
5. Once desired consistency is reached, kind of like a stew, serve with beans and rice, plus tortillas to provide mop up support.

10/31I've not tried cooking with tomatillos. Do you need to husk them or peel them? I love salsa verde, never tried to make it.
