Well after devouring Rev's chicken & dumplings, I wanted to cook up something different in the crockpot and decided on a basic family chile recipe:
1# Ground Beef
1 Yellow Onion, Diced
4 Jalapeño's, Diced
1 Red Bell Pepper, Diced
1 Green Bell Pepper, Diced
1 Head of Garlic, Minced
2 Cans Kidney Beans
2 Cans Tomato Sauce
1 Small Can Tomato Paste
2 Tbsp Chile Powder
2 Tbsp Ground Cumin
1 Tsp Ground Black Pepper
1 Tsp Salt
1 - Put beans, tomato sauce and tomato paste in the crockpot and turn it on high
2 - In a large skillet, brown the beef, breaking it into small chunks as it cooks.
3 - Add the diced veggies, garlic, and spices to the beef until cooked through and the liquid begins to evaporate.
4 - Add contents of skillet to the crockpot and let cook for 4-5 hours, stirring occasionally—add water if needed
5 - Serve with diced red onion, shredded sharp cheddar and crackers
