Fri, January 18, 2008 - 8:32 PMI've been making veggie soup with just a bit of beef for flavor for my daughter and me as we change our eating habits to be healthier. You can eat a really big bowl without too many calories.

Fri, January 18, 2008 - 8:36 PMOops, I use celery, tops and all, carrots, cabbage and carrots as a base, chopped fine. I add green beans, green pepper, zucchini, whatever is left over or in season. If I am using meat, I cut it very small and brown in a bit of olive oil. Put the meat, veggies and enough tomato juice to cover, turn on low and leave it. Gets better as the days go by. -

Sat, January 19, 2008 - 9:01 PMThat is wonderful! I love to make a big pot and what ever we don't eat I freeze for a later meal. I love making veg green chili the most. You can freeze it & use it for breakfast, lunch & dinner. -

Sat, January 19, 2008 - 9:15 PM1 package of Soy Chorizo
4 - 6 cans of diced chili's or 1 package of frozen chili's ( I use fresh roasted chili's but they may not be available.)
1 medium onion chopped
2 garlic cloves chopped
1 can diced tomatoes
1 tbsp olive oil
2 to 3 cups vegie or chicken broth
flour on hand
-put oil in pan & heat
-brown soy chorizo in pan w/ onions and garlic.
-Place in crock pot and add all ingredients except for flour & cook until bubbly.
-add flour by tsp. and whisk.
-bubble again. Whisk again.
-let cool & enjoy.
-freeze the rest in little freezer bags.

This is what I made on Sunday. The house smelled soooo good, and the meal was excellent. The pork was tender and just fell apart with a fork.
Sauerkraut Pork Roast
Ingredients:
1 pork shoulder roast 4 to 6 pounds
2 - 15 ounce cans sauerkraut
2 onions, sliced
1 tablespoon ground cinnamon (yes tablespoon)
1 tablespoon caraway seed (optional)
1 cup brown sugar
1 cup apple juice (or 1/2-cup each water and applesauce)
Directions:
Place the pork roast into the crockpot. Add the sauerkraut on top, and then the onions. Sprinkle the cinnamon and caraway seed over top of the onions. Scatter the brown sugar over this, and then pour in the apple juice. Cover the crock pot and cook it on High for 4 hours, or on Low for 7 to 8 hours.

Tue, January 22, 2008 - 10:46 PMI've done something similar with pork ribs, cut across the bone twice (butcher does this), then layered with sauerkraut, ribs, sauerkraut, ribs til you're done, then cover to top with water, add a couple of bay leaves & let it go all day. Deeelish! -
