Okra, crockpot style.....

Ok, So, I had a bunch of overgrown Okra from the garden that got a LEEETLE too big and a LEEEETLE to tough and fribrous. I figure, what the hell....cook it with a veggie soup in the crockpot and see what happens. I put the okra on the bottom...yeah...it was *that* tough, and put the rest of the stuff on top...Do you know, it came out edible??? Imagine...overgrown crookneck squash, zucchini, snap beans..they have hope. I did have to add a little more chicken stock to break down the fibrous strands...and there were still *some* in there....but, it was really really good.

  • i love okra in veggie soup. my new roommate hates it though so we aren't using it to often.

    • ahhh...sauteed in butter and garlic...roasted with corn and cherry tomatoes...fried in batter...even boiled in a little chicken broth...what's wrong with your poor room-mate?
      I have so much okra in my deep freezer...but, most of it is sooo tough. We had a *BIG* drought, here in NC...not enough water..but it still wanted to grow...plus my negligence.
      But, Now...I've found the answer...crockpot.
      Yes Food Gods...I Have Heard the Answer.
      I also thought about par-boiling it or blanching it before the actual recipe...what do you think about that?
