Crockpot French Onion Soup
(I'm putting the smallest version of portions I use - multiply as needed to fit your crockpot. It doesn't need to be *exact* cuz after all, it's soup!)
3 or 4 large white/yellow onions, thinly sliced
enough olive oil to thickly coat the bottom of your crock
1.5 to 2 quarts of beef broth
loaf of french bread (optional)
slices of strong flavored white cheese like swiss (optional)
coat the bottom of the crock well with olive oil then add onions. You may toss to coat, but it's really not necessary. Put crock on low for 6 to 8 hours to carmelize the onions. Add broth and let warm through for a half hour. The lazy way to finish this is to ladle it in a bowl and hand the person a hunk of bread to go with it. The impressive way to serve is to ladle into a single serving sized ceramic soup bowl or mug, cut a slice of french bread the same size and float it on top, put the cheese on top of that then pop under the broiler until the cheese is slightly browned.
