Cinco de Mayo

Any good Cinco de Mayo Crock pot ideas? Beans, pulled pork of some kind I'm sure, how about some chile con queso?

I'm organizing an office potluck for Cinco de Mayo and looking for ideas to motivate people.

  • I made pulled pork with verde salsa the other day. It was the most delicious pork I've made yet!! SOOOO tender!

    1 shoulder roast
    1 onion (sliced)
    (I usually use a sliced jalapeno or 2)
    1/2 bottle of verde salsa

    cook
    drain
    shred
    add the rest of the salsa

    Super delicious (like carnitas) for tostadas, salad, tacos, burritos ~~ you name it!!

    I prefer to cook black beans on the stove.

  • Crockpot Posole!


    Ingredients
    1-1 1/2 lb country-style pork ribs, boneless
    1 medium onion, chopped
    1 (29 ounce) can white hominy, drained
    1 (14 1/2 ounce) can diced tomato
    2 garlic clove, minced
    1 (4 ounce) can chopped green chili pepper
    1 teaspoon salt
    1/2 teaspoon thyme
    1/4 teaspoon cumin
    Directions

    1 Cube ribs and brown pork in lightly oiled skillet.
    2. Add onion and saute until limp.
    3 Drain fat.
    4. Combine pork, onion and remaining ingredients in crock pot.
    5 Cook on low heat for 5 hours to 6 hours.

    Serve with shredded cabbage, lemon slices and tortillas (I like to fry them whole, like tostada shells). Enjoy
    • Crockpot posolĂ© couldn't be any better an idea! However, if you're looking, specifically, for crockpot ideas for Cinco de Mayo, I'd offer the following:

      Sopa de Albondigas (meatball soup; www.cdkitchen.com/recipes/r...429.shtml)
      Spicy Mexi-meatloaf (basic crockpot meatloaf with salsa, cilantro and cornmeal, instead of breadcrumbs or oats)
      Sopa de Ajo Caldosa (garlic soup, also Filipino: www.happycow.net/recipes.php
      Mexican mac & cheese (southernfood.about.com/od/mac...10.htm)

      Okay, last tip. I don't recommend it, but there are LOTS of pre-cooked meatballs, out there. Especially at Costco. They make a pretty good albondigas with Better Than Bullion and some good veggies. Give it a try.
