So I finally tried this recipe for our lunch today and it was ridiculously good! Who knew only 2 very simple ingredients would turn out so well?! A great lunch that isn't so heavy too. We bought yummy chiabatta style rolls and the chewiness of the bread was a great compliment. No cheese necessary, although I can see how it would taste like a philly cheesesteak with peppers if you added it.. Here it is for those who don't want to go to the link. I cooked it on high for 3 hours for a 2.5 lb roast and it turned out perfect.

Yields: 12 servings

"Roast beef cooked in a slow cooker with garlic and pepperoncini makes a delicious and simple filling for gyro sandwiches. Serve on hoagie rolls with provolone or mozzarella cheese, and your choice of condiments. When making the sandwiches, place meat in rolls, cover with cheese, and zap in a microwave for a few seconds. Don't forget to use the pepperoncini in the sandwiches."

INGREDIENTS:
1 (3 pound) beef chuck roast
4 cloves garlic, sliced
1 (16 ounce) jar pepperoncini

DIRECTIONS:
1. Make small cuts in roast, and insert garlic slices in cuts. Place roast in the slow cooker, and pour the entire contents of the jar of pepperoncini, including liquid, over meat.

2. Cover, and cook on Low for 6 to 8 hours.

    • What exactly is Pepperoncini? Sounds interesting.
      • Pepperoncini are banana shaped peppers that are normally golden in color. They're usually 2-3 inches long, are mild and sweet with a slight heat to them, and are commonly pickled and sold packaged in jars. They're typically used in sandwiches, salads (particularly Greek salad, tossed salads served in pizzerias, and antipasto platters.) You can see a picture of them at wikipedia...here's the link...once you see the pic you'll probably recognize them...

  • Last night for dinner I put this in a skillet, poured some sauce/juice over it, and topped it with cheese. It was like a weird philly cheesesteak (more like a Crockpot cheese roast...). REALLY GOOD! I put it in chewy mini french baguettes that I warmed in the oven. I'll definitely make this again!
