Ex, I eat "mostly" vegetarian but once in a while I get a HUGE craving for my grandmother's black-eyed peas or "Hoppin' John"... my fiancee is Mexican and I created this variation for her.

Mexican Hoppin' John

1 smoked ham hock
3/4 lb dried black-eyed peas
3/4 lb dried pinto beans
1 white onion chopped
1-28 oz can of peeled/chopped tomatoes
1/2-3/4 t basil
1/4 t garlic powder
2 t lemon pepper
salt to taste

Wash and soak the beans for at least 2 hours or overnight, seperating out any husks, pieces or floating beans. Add all ingredients and cook on high for 6-8 hours. For a special treat I serve it with chopped cilantro, onion and hot sauce on the side. Enjoy!
