Hello,
I'm new to the tribe. I love beans. Any kind of beans. Even lentils. I don't cook a whole lot of meat though. Does anyone have a good bean or lentil recipe?

3 - 15 oz cans black beans, drained and rinsed.
1 1/2 cup chopped onions
1/1 2 cups chopped green pepper
1/1/2 cups chopped celery
4 cloves garlic, chopped
2 teaspoons Thyme
1 1/2 teaspoons Oregano
1/4 teaspoon Black Pepper
1/4 teaspoon Cayenne pepper
1 vegetable bouillon cube or vegetable base
5 bay leaves
1 14oz. can stewed tomatoes
1 cup water
Mix all together in Crock Pot, cover and cook on low 6 hours or high 4 hours. -

Mon, July 26, 2004 - 11:41 AMEx, I eat "mostly" vegetarian but once in a while I get a HUGE craving for my grandmother's black-eyed peas or "Hoppin' John"... my fiancee is Mexican and I created this variation for her.
Mexican Hoppin' John
1 smoked ham hock
3/4 lb dried black-eyed peas
3/4 lb dried pinto beans
1 white onion chopped
1-28 oz can of peeled/chopped tomatoes
1/2-3/4 t basil
1/4 t garlic powder
2 t lemon pepper
salt to taste
Wash and soak the beans for at least 2 hours or overnight, seperating out any husks, pieces or floating beans. Add all ingredients and cook on high for 6-8 hours. For a special treat I serve it with chopped cilantro, onion and hot sauce on the side. Enjoy! -

1 c lentils, rinsed and drained
1 medium carrot, shredded
1/2 finely choppped bell pepper (I usually put in lots more)
2 cloves garlic, minced (usually lots more)
1 dry bay leaf
1 small dry red chile
1 t ground cumin (I usually put in more)
4 cups water
3 T olive oil
3 T red wine vinegar
1/2 green onion, sliced
1 stalk celery, sliced (or leave it out and add salt)
S&P to taste
Combine first eight ingredients. Cook for a day on low until lentils can be mashed with a fork (I've been known to cook the lentils in water first).
Drain lentil mixture if necessary, remove chile and bay leaf. Mix in the oil, vinegar, onion, and celery. Season with S&P.
Yogurt Sauce
1 c plain yogurt
2 T golden raisins
chopped mint
To serve, spoon into pita halves and serve with yogurt sauce. -

black beans
water (about 2 or 3 to 1 part of beans, depending on how much broth you want)
A sprig of epazote and/or cilantro
Whole, fresh chiles to taste (jalapeño or serrano)
Salt to taste
Put it in the crockpot in the morning and it's ready by lunch. They're a wonderful side-dish and are beautiful with a splash of creme fraiche. -

I added two heaping tablespoons ov z powder to ze gigantic crock o'beans for ze camping party und have been inundated with ze recipe requests ever since. Simply add it to your already-recipe und amimble to use plenty o' big fat bacon piece chewies, too.
