Original recipe is here: crockpotrecipes101.com/vegeta...sta.htm but I tweaked it slightly to take into account what I had in the house.
2 med eggplants (peeled and cut into cubes)
28oz can crushed tomatoes
6oz can tomato paste
small can mushroom pieces
2 tsp minced garlic
2 tbsp sugar
1/2 cup water
Italian Pasta Seasoning (I use Trader Joe's, but there are several dollar store kinds that I like, too) - I didn't measure this, just sprinkled it on until I felt like there was enough :)
Put it all in the crockpot on low for about 7 or 8 hours (left it on the "Keep Warm" setting for a couple more between when the kids got home and I got home from work). Served it over penne. The youngest kid melted mozzarella on top and said it was good, everyone else ate it with just the pasta and even the picky 14 year old cleaned her plate. :)

08/19Sounds great and I bet if I fix it while hubby isn't at home he won't even know it's eggplant.
