Delicata is AMAZING. It's also known as "sweet potato squash." I've compared it to a "buttery pumpkin marshmallow" flavor. WOW.

I'm pretty sure you could make sweet potato butter out of this recipe. I use pumpkin, butternut squash, yams, and sweet potatoes interchangeably. I bet it would be divine, especially since chances are that you'll cook the sweet potatoes yourself, which makes the final product even better.

Wowzer. This stuff is magnificent. My cousin who lives next door is always looking for cool low fat recipes since her husband refuses to take cholesterol lowering drugs. She's a marvelous homemaker and is always sharing bits of this and that from her kitchen with me. Finally, I had something good to take over to her place to share along with the recipe. I didn't can it, just took some over in a bowl. They loved it. Score.
