we cook a big pot of something on sunday and if it goes well, we have sunday dinner and then lunches to take to work through wednesday.

last night the funds were low so we used everything in the cupboard and made some amazing mix.

3 cans of veggie broth
1 large can diced tomatoes
1 regular can diced tomatoes
1 can kidney beans
2 italian squash sliced
3 tablespoons chopped garlic (from a jar)
3 bags of frozen mixed veggies
1 box of precooked frozen brown rice (trader joe's)
salt & pepper
tobasco

put everything in the crock pot except the rice. cook for 4 hours on high then switch to low. microwave rice per directions and then add to crock pot for about 20 minutes and then put setting on "serve". it came out like a brothy veggie rice with a spicy sauce. so damn good.

  • Ahhh.... the old won't get paid till next Friday stew.....many variations. Some of the best meals I've ever eaten...it's amazing how creative you can get when given a 7/8 empty cupboard a refrigerator with 3 things left inside and a soup pot or a crockpot.
    Sounds good by the way. I love spicy!
    • potato goop

      10-12 med. potatoes cleaned and peeled
      couple handfuls of baby carrots chopped
      whole bundle of green onions (scallions) diced
      bag of fozen broccoli
      1 large can of cream of mushroom soup
      2 reg. size cans of veggie broth
      3 tablespoons minced garlic
      salt and pepper

      throw it all in. cook on high for 6 hours. i microwaved the potatoes on "potato" setting before slicing them into the pot. the broccoli breaks down to add to the veggie stock. came out as a thick soup. i added cheese and more scallions when i served it.
      • sounds like it was good. I've never had much luck with cauliflower and broccoli in my crockpot...they get all way too mushy, but if they break down enough to become part of the liquid....well... If you're wanting to make it like a baked potato soup with all the fixings, you could try adding the frozen broc at the last 30 min to 1 hr.
        Maybe even could try adding sour cream on top if you're not vegan.
