I buy my cow fresh out of the field. I get things I'd rather not have like...beef tongue lol. Has anyone ever cooked this stuff and what did you do with it? I see it being a crockpot sort of thing.
Maybe I should just give it to the dogs?

Tue, February 10, 2009 - 11:53 AMThe only time I've personally made tongue was pork tongue on the BBQ that was marinated (very very thinly sliced) and it was incredible - I turned people who were grossed out by the idea into true believers. I marinated in mirin, sesame oil, and soy sauce. It's like a chewy slice of steak (but in a good way)
Have you ever had a lengua taco? SOOOOOOOOOO good! I haven't made lengua (beef tongue) for tacos myself, but I've had them at restaurants and taquerias and they're delish. I did a quick google search of a lengua recipe and found this: jamsgems4u.blogspot.com/2008/0...an.html Sounds yummy!
My experience was if you left it on the grill too long it got chewy so I'm not sure how it'll hold up in a crockpot. -

Tue, February 10, 2009 - 11:55 AMHahah - I should have looked at the recipe I posted a little closer before recommending! It says to boil for 3 hours so crockpot probably is a good way to go about it. :) -

Tue, February 10, 2009 - 12:11 PMYeah, I sort of hunted through the internet too...I see "Tastes like...beef!" lol. I guess you need to take the skin off at some point. I've never had lengua tacos, but I'm intrigued enough to give it a try.
I'm not feeling so brave about the livers and heart. lol -

Tue, February 10, 2009 - 12:16 PMPersonally, I am not a fan of beef liver or heart and it was definitely around growing up. Tongue though... it's not something to wag your tongue at. hahaha... that was a terrible pun. My apologies for that.

Tue, February 10, 2009 - 2:44 PMLengua is very good. Tongue is also popular in the Jewish community where it is braised in onions and potatoes. Also very popular in Jewish delis sliced thinly on sandwiches with mustard and horseradish.

My grandfather used to make tongue tacos - so so good (as were the goat and pork jowel tacos!)
1 beef tongue
1 whole Passila - Ancho Dried Chile
1 large onion, quartered
4 or 5 garlic cloves, mashed
1/2 tsp Cumin
1 teaspoon black pepper
1 tablespoon salt
2 cups beef stock or packet of caldo de costilla de res
*in some places it is also called caldo de sabor de res
(look in the mexican food aisle)
water, to cover
Cook on Low for 8 hours
When you take the tongue out you'll peel off the outer layer
and then shred the tongue
When done, grab some corn tortillas (steam them to warm them) and add
cilantro, serrano chiles, queso, avocado, tomatoes and squirt with lime
muy sabor!
