Okay, really need some help here. I am looking for a crock pot recipe that is healthy (includes all food groups) that I can throw together in the morning and come home in the evening to a hot dinner ready to go. Being a type 2 diabetic, it's hard for me to eat as healthy as I should since I'm always on the go. So maybe someone has some good suggestions? Thanks!

My husband is a type 2 diabetic. I cook a lot out of Mable Hoffman's Healthy Crockery Cookery and from Better Home & Gardens Low Carb Slow Cooking (or something like that - there's actually a photo of this book in the photos). I'm sure you know this, but look for recipes with a protein to carb ratio of 2:1 and you're golden.
You can always do a soup, but I've found the best way to include "all food groups" is to serve a salad, or a pile of cut veggies, alongside. Right now I'm grooving on crock "chili verde," a pork roast in a pot with a jar of salsa verde.

Beef stew is a good option and bean soups. Contrary to type 2's avoiding carbs it is so not true.
I'm type 2 and do a lot of reserch and write a column on living with diabeties for our local paper occassionally.
The food pyramid works fine for us. Portion size is the key. Whole grains and beans are good carbs, high in nutrients, fiber and protein.Skip the potatoes though and the white rice and white breads.The 2:1 ratio protien to carb isn't necessarily healthy for us as protien is extremely hard on the kidneys.
